Extracts of buckwheat from Valtellina

Rich in mineral salts such as iron, zinc, selenium and proteins. It contains a high concentration of all essential fatty acids, especially lysine, threonine, tryptophan and sulphur-containing amino acids. It is also rich in antioxidants. Hardy and resistant to cold and drought, Valtellina buckwheat has long been a suitable field crop, planted after the summer harvest of rye, potatoes and barley. Thanks to its resistance to parasites, it could be planted without the use of pesticides. Until the 19th century, buckwheat was planted to rid the soil of toxins until it was displaced by new pesticide-resistant varieties. Today, it is rare to find fields and terraces with buckwheat.
